Healthy Nutritious Salad

This is the daily work-horse salad I make for my family. It gives you all the supplementary nutrition you may want over and above your regular meals. I have attended numerous naturopathy sessions over 20 years and this is the most fabulous salad recipe I have learnt and implemented. Those having acidity must atleast for a couple of days have this salad for breakfast and nothing else

Recipe card

  • Arugula leaves
  • Cucumber
  • Carrots
  • Broccoli lightly steamed and blanched
  • Walnuts
  • Mamra almonds
  • Grated fresh coconut
  • Fresh corn kernels
  • Raisins
  • Avocado
  • Fresh Blueberry
  • Mix of melon chia sunflower and pumpkin seeds

Mix all the above ingredients and don’t add dressing or salt. The corn and coconut will add flavour to the salad. You may add any other green leaves or beet tomatoes etc as per choice. Soak almond for 6 hours prior to using. Enjoy as salad or complete meal.

Those who require dressing (though we strictly don’t recommend) can use a mix of honey, rock salt, black pepper and lime. When I supply this to other people in my neighbourhood, I give this, since many people think salads are hard to eat without dressing. However, that is a wrong notion created by Western dressing makers, similar to saying you need a chocolatey additive to have milk. Even my children are now used to eating salad without dressing.
